    1 lb. ground turkey, 93% lean
    8 oz. lasagna noodles, regular, uncooked
    14.5 oz. can diced tomatoes, no salt added, with basil, oregano, garlic
    16 oz. tomato sauce, no salt added
    6 oz. tomato paste, no salt added
    2 cups small curd cottage cheese, nonfat
    2 cups part skim mozzarella cheese, shredded
    1 egg, whisked
    1 medium onion, chopped
    1 clove garlic, minced
    1/4 cup chopped parsley
    9 oz. fresh spinach, chopped
    1/4 cup shredded parmesan cheese


This may look dry when you put it together, but as the spinach cooks it releases additional juice. For a juicier lasagna, use 1 1/2 or 2 cans diced tomatoes, 8 oz. tomato sauce and 6 oz. tomato paste. Check the labels on the tomatoes - some marked "no salt" still have lots! I use diced tomatoes with 5 mg sodium per serving.


Cook turkey and onion, drain. Mix together diced tomatoes, tomato sauce, tomato paste. Spoon 1 cup spaghetti sauce in bottom of 4-quart crock pot. Mix remaining sauce with meat. Mix together cottage cheese, mozzarella cheese, egg, garlic, parsley and spinach. Place 2 uncooked lasagna noodles on sauce in crock pot. Spread 1/3 meat mixture on top of noodles. Spread 1 1/2 cups cheese mixture over meat. Add another layer of uncooked noodles, 1/3 meat mixture, and 1 1/2 cups cheese mixture. Place another layer of noodles, meat mixture, cheese mixture. Sprinkle parmesan cheese over top. Cook on low 4 hours. Turn off crock pot. Let sit 15 minutes before serving.
