    1.5 Cups Egg Beaters or other egg substitute
    1 Cup Sliced Mushrooms
    1 Cup Sliced Leeks, cleaned
    1/2 Cup Reduced Fat Mozzarella Cheese, grated
    1/3 Cup Parmesan, finely grated
    1/5 Tbsp Smart Balance Lite Buttery Spread
    salt and pepper to taste


*make sure to use a stove-top and oven safe dish!*

saute leeks in smart balance until white parts are translucent. then add the mushrooms and cook until tender. add egg beaters and seasoning and cook until just under set, stirring occasionally.

sprinkle cheese over the top and transfer dish to a preheated, 350* oven for about 10 minutes, or until cheeses are golden brown.

serve along with radish hashborwns!
