    12 leaves of kale
    8 cup of vegetable stock

    1 onion cubed
    5 cloves of garlic chopped
    350 g of round of lamb cubed(1/2 inch cube)

    2 potatoes
    2 sweet potatoes

    8 mushrooms sliced
    1.5 cup of arugula (chiffonade)
    1 cup of cooking crean philadelphia


- Blanch the kale in vegetable stock. (when softten stop the cooking in a ice bath) Reseved the kale for latter and use the stock as a braising liquid
-seize the onion, galic and Lamb and add half of the cooking stock. Cover and cook at meddium heat for 45 min

Boiled the potato in the other half of the stock until tender, drain and puree. ( Keep the stock for the sauce.

-Drain the meat and mix in the puree.
-roll the mixture in the blanched kale

-Reduce by half the stock add the sliced mushroom and arugula. stir in the cooking cream.

Serving Size: 4 x 3 rolls serving with sauce
