Cheap and easy! Generous servings, and very healthy and tasty! Of course, you can take away or add any veggies or seasonings as you wish or have available. Cheap and easy! Ingredients

    1 sweet potato, diced
    1 potato, diced
    1 green pepper, diced
    1/2 red onion, diced or chopped
    4 cloves garlic, quartered
    1 T rosemary
    1 tsp basil
    1/2 tsp thyme
    1/2 tsp salt
    1/2 tsp pepper
    1 T vinegar

Directions

Coat a baking sheet with nonstick spray. Place the chopped veggies on the sheet. Add the spices, garlic, and vinegar. Toss and distribute evenly over pan. Bake at 400 degrees for about 20 minutes.
