Ingredients

1 16 oz Blue Fish, fillet with skin on
2 Tbs Olive oil
1 cup seasoned bread crumbs
salt & pepper to taste
1 lemon, cut into wedges
For the bread crumbs:
coursely grate and lightly dry-toast whole wheat bread crumbs
1 tsp each, crushed rosemary, parsley, thyme
1/4 tsp garlic powder
-or-
you can use commercial Italian seasoned breadcrumbs
Directions
Preheat oven to 375
Place Blue Fish fillet, skin side down, in an oven proof dish, that has been lightly greased with half the olive oil (or use a spray)
Rub the fish fillet with the rest of the oil, salt and pepper.
Moisten bread crumbs with a couple tablespoons of water and then spread crumbs on top of the fish
Cover dish with lid or foil and place in the oven.
Cook fish for 20-30 minutes, depending on thickness, or until done.
Serve with lemon wedges.
This dish is nice served with a side of asparagus in lemon butter and brown rice.
