Number of Servings: 4

Ingredients

    1 lb of Tilapia
    3 T water (divided)
    1t Cornstarch
    1/2 t Salt (divided)
    1/2 t Pepper (divided)
    2 t Olive Oil
    2 lemons
    2 t Capers

Directions

1. Combine 1 T of water with the cornstarch in a bowl. (set aside)
2. Sprinkle 1/4 t of salt and 1/4 t of pepper over both sides of fish.
3. Heat olive oil in a large skillet. Over Med-high heat. Put fish in the skillet and cook 3-4 mins on each side or until fish flakes easily. Remove from pan and keep warm.
4. Grate 1/4 t rind from 1 lemon. Squeeze 1/3 C of lemon juice over a bowl. Combine juice and rind with 2 T of water and remaining salt and pepper and 2 t Capers. Add lemon mixture to pan and cook 2 mins. Stir in cornstarch mixture and bring to a boil. and cook 1 min until thick. Serve sauce over fish.
Serving size = 1 fillet and 1 table spoon of sauce

This recipe was modified from weight watcher's 5 ingredient 15 minute cookbook. (Grouper with Lemon-Caper Sauce). I use Tilapia and slightly less fish. Their recipe calls for 4 - 6oz grouper fillets.
