Ingredients

    1 cup dry kamut (or other whole grain)
    1 large bunch kale, stemmed, cleaned and chopped
    1/2c dried cranberries
    1 can chickpeas, drained and rinsed
    1 bunch scallions, sliced thinly
    2-3 large beets, roasted and chopped
    1/4c olive oil
    1c red wine vinegar
    Salt & pepper to taste

Directions

Prepare kamut according to the package. At the last 10 minutes, add the kale in bunches and let it wilt, stirring into the grains.

Combine kamut, kale and all other ingredients. Season to taste.

Serving Size: Makes 5 2c servings
