Introduction

Ingredients

    1 medium Acorn Squash
    1 medium Butternut Squash
    2 carrots, coarsely chopped
    2 celery ribs, coarsely chopped
    Chipotle Peppers in Adobo Sauce
    6 c. Vegetable Broth
    1 medium onion, coarsely chopped
    8 oz. Heavy Cream
    3 cloves of garlic
    1 T Olive Oil


Tips

You can garnish with Cilantro and sour cream but it's perfect the way it is!


Directions

Cut squash in half and lay flesh side down in a roasting pan. Roast at 400 degrees for 35-40 min. Let cool.
Saute onion, celery and carrots in olive oil until tender. Add garlic and saute an additional 2-3 min.
Scoop out squash flesh and add to the pot. Add the vegetable broth. Simmer for 30 min. Take an immersion blender (or food processor) and blend until creamy. Add the whipping cream and serve!!
