Introduction

Though I have to be Gluten Free I decided to try Vegan for a month and this soup turned out awesome.

Ingredients

    Pumpkin, cooked, 4 cup, mashed
    Cashew Butter, 6 tbsp
    *Swanson Vegetable Stock Certified Organic, 6 cup
    *1 cup onion chopped
    *Pepper - Green pepper - chopped - raw, 1 cup
    Celery, raw, 4 stalk, medium, chopped
    Banana, fresh, 2, chopped
    *Apple (3 cup chopped),
    Pepper, red or cayenne, 3 tbsp
    *Potato, raw, 3 medium

Tips

Best the next day after all the flavors have blended overnight.


Directions

Put all ingredients into a stock pot except the banana, apple and cayenne pepper. Cook on Med-high for 20min. or until veggies are softened. Add banana, apple and cayenne pepper and cook 5 more minutes.
