Introduction

Ingredients

10 oz. chorizo
1 lb. ground beef
3 garlic cloves
2 T. tomato paste
1 can tomato sauce (14 oz?)
1/2 c. beef broth or red wine
1 large onion, diced
3 large green peppers, 1" dice
salt and pepper to taste
brown rice, prepared according to pkg directions
1/4 c. parmesan cheese
2 T. butter
A handful of chopped parsley for garnish
Tips
Can substitute italian sausage for the chorizo. Can also make everything (except rice) ahead and refrigerate for several days before warming it up and serving it over hot rice.
Directions
Brown ground beef, set aside. Cook chorizo. Add to ground beef on the side. In the drippings, cook garlic, onion and green peppers until crisp/tender (about 7 minutes). Add meat back in along with the tomato paste and stock/wine. Cook one minute or so until combined, then add the tomato sauce. Add salt and pepper along the way. Cook about 5 minutes until flavors are combined. This can be refrigerated at this point and warmed later to serve over the following rice dish.
Cook brown rice according to the directions on the package. Add butter and parmesan to the hot cooked rice and stir until combined. Serve the sausage and pepper mixture over the hot rice and enjoy!
