Introduction

This comes out so moist, and you cut out most of the fat using applesauce. This comes out so moist, and you cut out most of the fat using applesauce.
Number of Servings: 12

Ingredients

    2 cups flour
    3/4 cup sugar
    3 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 egg
    3/4 cup milk
    1/4 cup applesauce
    1 1/2 cups mashed bananas

Directions

Preheat oven to 350. Grease bread loaf pan, unless it's non stick.

Mix all dry ingredients into a large bowl, make sure to mix well.

Mix all wet ingredients in another bowl, make sure to mix thoroughly.

Add liquid mix to dry mix and stir thoroughly.

Put into bread loaf pan and cook for approximately 55 to 65 minutes. I always start checking the colour around 50 minutes, should be a nice golden brown. Insert a toothpick in centre to check if it's done. Toothpick may be moist from bananas, just make sure it's not moist from batter.

Let bread cool in pans for about 5 to 10 minutes. Run a knife along outside edge to loosen sides.

Looking for something sweet, add chocolate chips, just make sure to add in your calories.

This bread is great warm with peanut butter on it.

Yum! I just made this. I doubled the recipe and made one batch into muffins, adding 1/2 cup pecans, 1/2 cup chocolate chips, and 1/2 cup of coconut. The muffins are great - and the bread is still baking. (Muffins took 20 minutes.) - 3/7/10

This recipe is a very good banana bread recipe. I used whole wheat flour instead of all-purpose and granulated sugar because the recipe didn't specify. I found the bread to be a tad sweet, so I'll cut back on the sugar next time. - 6/22/10

This is a great recipe. My husband is not a very big sweets eater, but he gulped it down. If he had more than two thumbs he would have put them all up. I tweeked it also by using 1cup white flour, 1 cup wheat flour, vanilla, cinnamon, walnuts, and choco. chips. I will definitely make it again. - 8/28/09

Outstanding! I did not have a bread pan so I used a small glass casserole dish. Sprayed it with a little butter cooking spray. The cooking time is reduced in the casserole due to the batter being more spread out. I baked about 40 minutes, just checked with toothpick until it came out clean. - 8/14/13

Next time, I will be adding the chopped walnuts for a nice crunch! :-) p.s. 3 large bananas = 1.5 cups mashed - 4/2/12

  • Delish! So moist, great banana flavor. I love the simplicity of ingredients. The only variation I use when making this is to add a heaping T of baking powder versus 3 measured teaspoons. I think the extra BP helps with the fluffiness of this bread. Thanks for a great recipe! - 8/11/15

  • added walnuts, the pan I made it in (std 9x5, not coated w/ non-stick), the loaf rise and spilled over then fell. Next time I will divide it into two non-stick that are shallower and are 9x6 so it should turn out more like a biscotti shape. Might also use fewer walnuts and chop them rather whole. - 7/4/15
