Ingredients

    2 tbsp Butter, unsalted
    2 tbsp Curry powder
    1 tsp Salt
    1 med yellow onion, chopped
    3 medium Sweet potato, cut into cubes
    3 large Carrots, large cut
    4 medium whole Tomatoes, sliced into wedges
    2 cup Red lentils
    4 cups boiling water

Directions

Heat butter in a medium sauce pan on medium high. Add curry powder and stir. Add onion and salt. Saute until onions are slightly soft, about 2 minutes. Add sweet potatoes, carrots, and tomatoes, stir. Add lentils and then stir. Add boiling water. Reduce heat to low and cook for 20 minutes.
