    Spinach, fresh, 1 cup
    *Onion, White, Fresh, 1 cup
    *Extra Virgin Olive Oil, 1 tbsp
    Egg, fresh, whole, raw, 4 large
    Mozzarella Cheese, part skim milk, 24 oz
    Pinch of Salt= 1/16 Tsp., 1 serving
    Pinch of Curry powder= 1/16 Tsp., 1 serving

Preheat oven to 350.

SautÚ onion and spinach in skillet with olive oil. Add pinch of salt and curry powder. SautÚ until spinach turns bright green. Remove from heat and set aside.

Break eggs into large bowl and whisk until mixed thoroughly.

Grate cheese into bowl.

Add all ingredients together and mix well. Place mixture into a lightly oiled pie dish.

Place in oven uncovered for 45 minutes or until egg is thoroughly cooked and the top is golden brown.

Remove from oven and let sit for at least 10 minutes prior to serving.

Serving Size:áMakes 6 pie slices.
