Introduction

Hands-down the best buffalo chicken chili you will ever have. The secret? Grinding your own chicken! Don't be scared! Hands-down the best buffalo chicken chili you will ever have. The secret? Grinding your own chicken! Don't be scared!
Number of Servings: 10

Ingredients

    1 tablespoon olive oil
2 pounds boneless, skinless chicken breasts
    2 large carrots
    3 stalks celery
    1 large red pepper
    5 cloves garlic
    5 tablespoons chili powder
    2 tablespoons ground cumin
    1 tablespoon paprika
    1/2 cup Frank's RedHot Sauce
2 (15 oz) cans no salt added tomato sauce
1 (15 oz) can no salt added diced tomatoes
1 (15 oz) can no salt added black beans, drained
1 (15 oz) can chili beans in sauce (do not drain)
    salt and pepper to taste

Tips

If you don't have a food processor, simply chop up the chicken and veggies. I mention to salt at the end, because Frank's hot sauce has enough sodium for me.

Editor's note: To further reduce salt in this recipe, we recommend no salt added beans and tomatoes.

Directions

Heat your slow cooker on high. Add in olive oil. In a food processor, grind up your chicken until it is coarse like ground beef. Add chicken to slow cooker and cook for about 10 minutes. Rinse out the food processor, and add in the carrots, celery and red pepper and process until slightly chunky.

Add to ground chicken. Add remaining ingredients except salt and pepper and cook for 2 hours. Taste and see if it needs salt and pepper.

Serve with cilantro, sour cream, cheddar cheese or tortilla chips on the side.

Serving Size:10 - 1 cup servings

My new favorite chili recipe!!!! I cooked it on low for 8 hours today while at work and cut my chicken into small chunks instead of making it ground and it turned out perfect! I'm in love. Nice and spicy. Was great with saltines. Looking forward to making more. - 12/16/13

I have this recipe on my tracker for Saturday and it really looks delicious. However the salt content is far too high for me. Here is what I am changing out for Frank's Hot Sauce... (I have to say that one is my favorite too!) I am using Chipotle Powder. It is smoky and just spicy enough. - 12/5/13

This recipe is wonderful, and pretty easy to make. My DH loved it and was surprised the flavor was so good with it only cooking for 2 hours. My mom, who does not like spicy food, was concerned it'd be too spicy for her, but she enjoyed it too. - 9/6/17

This was delicious, but a bit high with the sodium, I used beans that I cooked with my own sauce, to cut the sodium down. - 4/16/17

This is pretty good for chicken in chili. However, I didn't add salt. You don't really need it. - 4/9/17

Way to much salt...suggestion...use plain kidney beans instead of the ones in a sauce...probably the culprit of the excess salt. - 3/28/17

Very good and much healthier than our normal chili. I chopped the chicken by hand and it was fine. I would add onion next time. - 1/4/15

Really not a fan of this recipe. Hubby liked it but I found it to be too rich with the 5 tablespoons of chili powder and 30oz of tomato sauce. - 12/9/13

I made this recipe and felt that 1/2 cup of Frank's Hot Sauce was way too much. I love hot food but this amount made the chili unbearable to eat. Next time I will reduce the hot sauce by half or more.

In the words of my husband: "This is outstanding". And later as leftovers: "Exceptional". I lightly browned chicken (thighs) cut in to small chunks in a separate pan before adding it to all of the ingredients as listed (except the red pepper - not a fan) in the crockpot. 7 hours on low. Tasty! - 1/15/18

I always chop green beans abut 1 inch long and add them to my chili. A good way to get extra veggies and you can barely tell they are in there. The chili taste covers them up almost completely. - 8/19/17
