I use rye flour for my starter. I use rye flour for my starter.

    .5 cup of rye sourdough slurry
    1 egg, beaten
    .5 tsp baking soda
    1 pat butter


I like to put a little butter on the pancakes, then top with cubes of cantaloupe, papaya, banana - whatever I have on hand - then some warm pure maple syrup and a bit of homemade kefir.


Heat a griddle or a skillet and coat with melted butter, saving some of the pat to put on top of the pancakes.
Using a whisk, mix the ingredients together.
Spoon the batter onto the griddle. Cook until bubbles appear and the edges firm up. Flip and cook until golden. Meanwhile, heat some pure maple syrup to pour over them.

Serving Size: Makes 4 4" diameter pancakes (2 per serving)
