Ingredients

    3 whole skinless, boneless chicken breasts in bite-sized chunks
    1 can lite coconut milk
    1 can water chestnuts
    4 large potatoes, large dices
    4 carrots, large dices
    1 can tomato sauce
    splash of non-alcoholic wine
    1/2 tsp cumin
    1 tsp coriander
    1 tsp tumeric
    1 tsp ginger
    5 cloves garlic, diced fine
    4 green onions, diced fine
    1/2 C water

Directions

Combine all ingredients in a slow cooker. Cook on high 1 hour, on low at least 4 hours or until dinner. Serve over rice, if desired. Or use tortillas to eat it with your hands like we used to do in Malaysia.
