    2 cups whole wheat flour
    1/3 cup egg whites
    2 oz chopped pecans
    1/2 cup unsweetened applesauce
    1 cup granulated sugar
    1/2 tsp cinnamon
    1/8 tsp nutmeg
    1 tbls baking soda
    1 tsp baking powder


Heat oven to 350 degrees. Mash bananas; add sugar and let sit 10 minutes; stir in applesauce, egg whites, pecans, cinnamon, nutmeg; combine whole wheat flour, baking soda and baking powder and then add to banana mixture. Spray loaf pan with non stick cooking spray and pour mixture into pan. Bake for at least 45 minutes; check to see if done, if not, cook another 15 minutes.
