    10-12 spears fresh asparagus, cut into 3" lengths
    1 red onion, sliced
    1/2 of a medium green bell pepper, cut into 1/4" wide strips
    1/2 of a large red bell pepper, cut into 1/4" wide strips
    3 cloves garlic, minced or cut into strips
    1 tablespoon olive oil
    1/2 teaspoon black pepper
    1 teaspoon dried chili pepper or red pepper


This side item is great with steak!


Prepare vegetables and toss together in a large bowl. Drizzle with olive oil and sprinkle with peppers. Toss gently until all vegetables appear to be coated with oil.
Spread vegetables on a large cookie sheet or roasting pan. Place in a 375 degree oven. Roast for 20-30 minutes, tossing vegetables gently every 10 minutes, until asparagus is tender.
