    Three boneleass, skinless chicken breasts
    One jar of Newman's Own Mango or Pineapple Salsa
    8oz. package of Fat-Free cream cheese
    1 Cup of fresh or canned corn

    Optional: lettuce, tomato, black olives, hot peppers, brown rice, fat-free refried beans, low carb burrito!


I have also made this recipe with Laughing Cow Light Queso Chipotle. For three chicken breasts, use 6 wedges.


Cook salted and peppered chicken in crock pot with a little water about 4 hours. Add salsa, cream cheese, and corn. Stir to blend. Let simmer for 1 hour. Stir and enjoy on a burrito with lettuce, tomato and black olives (not added in calorie count) or over some brown rice (not added in calorie count), you still have an under 400 calorie meal. I love to add some heat - hot peppers or cayenne powder!
