    2 lbs. boneless chicken breast, cut into 1/2 inch cubes
    1 green pepper, diced
    2 sweet onions, diced
    1 tablespoon olive oil
    2 cans diced tomatoes
    1 can Bush's White Beans
    2 packages McCormick's White Chicken Chili seasoning packets


Top with grated/shredded cheese, sour cream, cilantro, sliced green onion or whatever toppings you desire. Toppings not included in nutritional information.


Heat olive oil in large saucepan. Add cubed raw chicken, diced green pepper and onion to heated saucepan. Cook until no longer pink. Add undrained tomatoes, undrained beans, seasoning mix and one can full of water to saucepan. Stir and bring to a boil. Reduce heat, cover and simmer for 30 minutes (stirring occasionally).
