    Onion, raw, 30 oz (about 2 whole onions)
    Lentils, dry, 2 cup
    Rice, brown (or mixed brown, red & wild), raw, 2 cup
    Olive Oil, 1 cup
    Cumin seed, 2 t
    Pepper flakes, dried, 1/2 t
    Cardamom, 1/2 t


Chop onions and cook at medium heat in large Dutch until carmelized. The more color the onions have, the better the flavor. When onions are done, strain through metal mesh colander and remove 1/2 to 3/4 cup of oil. (Onion infused oil will be great in other dishes.) Return onions and oil to pot, add ground spices (optional) and stir. Add 9 cups of water. Bring to boil and reduce heat to simmer. Cover and cook for 1/2 hour. Add rice, cover and cook 1 hour.
