    1 large eggplant
    1 can diced Italian tomatoes
    1 sack Daiya Monzerella style cheese


Peel and cut eggplant into this rounds. Fry eggplant in a little olive oil until brown on both sides. Pour 1 can of Italian diced tomatoes over eggplant and then cover with cheese. Cover and let simmer until cheese is melted.
