Introduction

This is an alternative to traditional Taco soup with no beans substituted squash for the beans. This is an alternative to traditional Taco soup with no beans substituted squash for the beans.

Ingredients

    Ground Turkey 1.2lb 93% fat free
    1 medium Jalapeno chopped
    White onion chopped 1/2 cup
    2 gloves of Fresh Garlic chopped
    Taco Seasoning 1 pkg
    4 cups Fat Free Chicken Broth
    1 small yellow squash sliced
    1 small zucchini squash sliced
    2 cans 14 oz Whole peeled tomatoes chopped not drained

Tips

May spice up as wanted more or less jalapeno or eliminate if do not want the spice.


Directions

Place Ground Turkey and onion, garlic,and jalapeno in large dutch oven or soup pot add 1/2 cup of chicken broth to this while browning on medium heat. When turkey is no longer pink add 1 Pkg of Taco Seasoning. Add 2 cans of peeled tomatoes chop up tomatoes add remaining Chicken Broth. Cut up squash and add to mixture. Cook until squash is tender.
