Ingredients

    *Tyson boneless, skinless chicken breast, 20 oz
    *CHOBANI Greek Yogurt - plain nonfat yogurt (8oz/227g), 6 oz
    *Buttermilk, .25 cup
    Onions, raw, .25 cup, chopped
    Lemon juice, .5 tbsp
    Hot Pepper Sauce, 1 tsp
    Total Corn Flakes Cereal, 1.5 cup (1 serving)
    *Creole seasoning, 2 tsp
    Poultry seasoning, .5 tsp

Directions

Whisk together yogurt, buttermilk, chopped Vidalia
onions, lemon juice, hot sauce and 1
tsp. seasoning. Add chicken and coat well and evenl
y with gloved hands. Cover and
refrigerate overnight to marinade.

Finely grind the cereal together with poultry seaso
ning and remaining southern or creole
seasoning blend in a food processor. Alternately,
place flakes and seasonings in a zip top
plastic bag and use rolling pin to crush to crumbs.
Transfer crumbs to a large gallon size
plastic bag. Drop the chicken into the plastic bag,
seal and shake until each piece is
evenly coated, or place crumbs on tray and roll chi
cken pieces in crumbs to evenly coat.
Place coated pieces on a prepared rack sprayed even
ly with cooking spray.
3.
Bake in a 350 degree oven until the coating crisps
and browns and an instant-read
thermometer inserted registers 160 degrees F (about
15-20 minutes).
