    canola oil, water, red onion, sweet bell pepper (any color I used red), zucchini 1 baby about 6 inches long, 3 large mushrooms, a hand full of whole sugar snap peas and 3 oz of left over cooked chicken breast ( you could of course use raw chicken just cook first)


put 1 tsp of oil in pan and heat on med-high heat until hot toss in onions and peppers and toss about for about 2 minutes add remaining ingredients and stir about for another 2 to 3 minutes or until water is absorbed/cooked off. You can use over rice but i just ate it as is! You can easily add any fresh veg you like to this such as broccoli, celery or what have you or take out what you do not like. It's very filling and fiber filled. YUMO!
