Ingredients

8 cups low-sodium vegetable broth
2 carrots, sliced
2 leeks, sliced
1-2 zucchini, sliced
2 celery stalks, sliced
8-10 mushrooms, sliced
15 oz can kidney beans
2 gloves garlic, chopped
1 tsp Himalayan salt
1 Tbsp Italian seasoning
1 tsp red pepper flakes
1 tsp dried basil
1 tsp dried parsley
1/4 cup small dried pasta
Tips
If you do not have time to add pasta, cook it separately and stir in before serving.
Directions
Add carrots, leeks, zucchini, celery, mushrooms, kidney beans and garlic to slow cooker. (Mine is a 5 quart slow cooker.) Add the broth and seasoning. Cover and set slow cooker for 10 hours. When soup is 2 hours from being done, add the dry pasta.
