    Full mixture ingredient list below, including salt & baking soda.

    If you find this too dry, add 1/2 cup of coconut milk or until desired texture.

    2 ripe bananas-mashed
    3 eggs
    1 teaspoon vanilla extract
    2 cups almond meal
    1/2 teaspoon baking soda
    1/2 sea salt
    1 tablespoon cinnamon
    1 cup fresh blueberries (or frozen)


If you find this too dry, add 1/2 cup of coconut milk or until desired texture.


Large mixing bowl combine bananas, eggs, vanilla with hand mixer. May need to add 1/2 of coconut milk to desired texture.

In a medium bowl mix all dry ingredients.

Pour dry ingredients into large mixing bowl banana mixture and mix until well blended.
Fold in fresh blueberries with a spoon.
Heat skillet over medium heat with great with coconut oil.

Scoop out about 1/4 cup of mixture into hot skillet.
Cook 4-5 minutes per side-watching carefully. Flip pancakes when brown and holding together.

Makes 10-12 medium sized pancakes.

Serving Size: Can make 8-10 servings
