    3 whole Chicken Breast Fillets (Just Bare)
    1/4 cup Kemps Cultured Lowfat Buttermilk
    1/2 cup *Bread Crumbs - Kikkoman Panko
    1/4 cup Parmesan Cheese, grated (Crystal Farms)
    1 tsp dried basil
    1 tsp garlic powder
    1/2 tsp white pepper
    OPTIONAL: salt to taste


These reheat beautifully in the microwave. Although I calculated the nutrition based on three full fillets, I usually cut them in half and serve them with pasta for lunch.


Preheat oven to 400 degrees.
Dry chicken fillets with paper towels. Place buttermilk in a shallow pan and put the fillets in, turning over to coat both sides. Leave the fillets in the buttermilk for 5 minutes while preparing the coating.
Put bread crumbs and Parmesan cheese in a separate shallow pan and season with basil, garlic powder and pepper. Adding salt is optional, I did not add it. Mix the coating throughly.
Remove fillets from the buttermilk and shake off the excess. Place fillets one at a time into the coating and turn over pressing the coating onto the meat. Place the coated fillets on a baking sheet lined with parchment paper and put into the oven for 20 minutes or until the internal temperature reaches 165 degrees.
Serve with hot marinara sauce.
