Introduction

A quick dinner salad. A quick dinner salad.

Ingredients

    Romaine Lettuce (salad), 1.5 cup, shredded
    Spinach, fresh, 15 leaf
    Red Ripe tomatoes, 6 cherry
    Mushrooms, fresh, 15 slices
    Yellow Peppers (sweet bell peppers), 3 strips
    Green onions, raw, .125 tbsp chopped
    Snap peas, .125 cup

Directions

Preparation:

Rinse produce.

Shred lettuce, seperate spinach leafs, slice mushrooms, slice yellow peppers, chop green onions.

Mix ingredients in a single service bowl, add snap peas and tomatoes, serve with low fat or no fat dressing on the side.

I also serve with 1 cubic inch of feta cheese for those who prefer it.
