    6 cups cubed butternut squash, cooked
    1/2 cup chopped onion
    2 cups low sodium fat free chicken broth
    1/2 cup fat free half and half
    1/2 tsp pumpkin pie spice
    pinch ground red (cayenne) pepper
    pinch ground cumin
    fresh ground black pepper
    1 Tbsp canola oil


Heat oil in medium sized heavy pot over medium high heat. Saute onion until softened and translucent. Add cooked squash cubes, chicken broth, pumpkin pie spice, cumin, and cayenne. Bring to a boil then reduce heat to simmer and add half and half. Simmer until heated through. Remove from heat and puree in blender or with immersion blender until desired consistency. Season with cracked black pepper.

Serving Size: 6 servings approx 1 1/2 cup each
