Ingredients

1 cup dry black beans, soaked overnight or 6+ hours
1-2 rounds fresh ginger
1/8 t turmeric
1 jalapeno or serrano, opened lengthwise, but intact.
1/2 T coconut oil
1 1/2 cup chopped onion
1/2 T minced ginger
1/2 T cumin
1/4 t turmeric
cayenne to taste
1 1/2 cup chopped tomatoes with juices
1 cup chopped bell pepper (red or yellow)
1 1/2 cup chopped packed spinach
2 T lemon juice
optional garam marsala
Directions
Soak beans for at least 6 hours and rinse. Simmer with ginger rounds, turmeric, and hot pepper for 45+ minutes, until done. Drain reserving cooking liquid.
In large pan, saute onion over medium heat in coconut oil until golden brown, about 15 minutes. About half-way through cooking, add next 4 ingredients (spices). Once onions are cooked 15 minutes, add tomatoes and cook addl 5 minutes. Then add bell pepper, spinach, cooked beans and salt. Heat through for 10-15 minutes. Finish with lemon juice and optional garam marsala.
Serving Size: Makes 4 servings
