Yummy sweet crepes that won't blow your diet. Yummy sweet crepes that won't blow your diet.
Number of Servings: 8


    1.25 cups fat free milk
    3/4 cup egg substittue
    3/4 teaspoon vanilla extract
    1 cup all purpse flour
    1 teaspoon sugar
    1/4 teaspoon salt
    2/3 cup strawberry spreadable fruit (I use smuckers sugar free)
    3 cups choped fresh strawberries
    2 teaspoons confectioners; sugar


In large mixing bowl, combine the milk, egg substitute, and vanilla. Combine the flour, sugar, and salt; add to mlk misture and mix well. Cover and refrigerate for one hour.

Coat a 7 or 8 in nonstick skillet with cooking spray. Heat skillet over medium heat. Pour about 2 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cool until top appears dry; turn and cook 15-20 seconds longer. remove to plate; keep warm. Repeat with reamining batter; coating with cooking spray when needed.

spread each crepe with about 2 teaspoons spreadable fuit. Top with about 3 tablespoons straberries. roll up and sprinkle with powdered sugar.

1 serving = 2 filled crepes.
