Number of Servings: 6


    One package of chicken pieces with skin removed.
    1 can of cream of mushroom low fat (can use cream of broccoli, cream of chicken, cream or celery)
    1 cup of instant rice
    1 package of Dry Onion Soup
    1-2 Packages of frozen veggies, Broccoli, Cauliflower are favorites, but any will work
    1 cup of water, chicken broth or extra can of a cream soup


Serves about 6, or as many pieces of chicken will fit in the tray.
Spray a casserole dish with non-stick spray, I use a 12x8 glass dish.
Skin the chicken, rinse and pat dry.
In a bowl mix all the cream soup, rice, extra can of creamed soup or water or broth and warmed frozen veggies.
Put mixture in the bottom of greased pan, layer chicken over the top and sprinkle the onion soup over the top of the chicken.
Tent foil over the top and cook until the chicken is almost done. Remove foil and let the casserole get crispy.
