I had a HUGE zucchini from my garden so I decided to make it into mini pizzas. YUM! I had a HUGE zucchini from my garden so I decided to make it into mini pizzas. YUM!
Number of Servings: 11


    3 cups zucchini
    1 cup pizza sauce
    1 cup shredded cheese (I used Sargento reduced fat 4 cheese mexican cheese)
    about 20 pieces Hormel Turkey Pepperoni


You can scrape out the seeds if you don't like them. I just flipped the pizza over and took the seeds off the bottom before eating it.


Preheat oven to 425 degrees fahrenheit. I used a very large zucchini, peel it, and slice it into 1/4 inch thick slices (about 3" in diameter). Place on cookie sheet or baking stone. Add sauce, pepperoni and cheese. I put pepperoni on 5 slices and just cheese on the rest. Bake for about 30 minutes, or until cheese is browned. Serve.
