Ingredients

    1/2 Cup Quaker Old Fashioned Oatmeal
    1/2 Cup Egg Whites
    1/4 tsp baking powder
    1/4 tsp cinnamon (or to taste)
    1/4 cup blueberries, fresh or frozen
    1 TBS vanilla protein powder (I use Lean 25)
    1 TBS ground flax seed
    Maple Syrup, Butter, other toppings optional

Tips

I like to cut my cooked pancake in half. Spread each piece with 1/2 TBS peanut butter then put together "sandwhich style". This is a very filling breakfast - it takes me from 6:00 am to noon with no problem.


Directions

Mix all ingredients except for the optional toppings of your choice. Cook on medium in a skillet coated with cooking spray. Flip about 1/2 way through (when the edges are bubby and a crust has formed on the bottom and continue cooking until cooked through.
