Ingredients

    World Market Pumpkins Bark, 60 gram
    Egg white, fresh, 2 large
    Egg, fresh, whole, raw, 1 large
    Butter, salted, 0.5 cup
    Naturally Preferred Organic Cinnamon Applesauce, 0.5 cup
    Brown Sugar, 1 cup, packed
    *Flour, white, 3 cup
    Vanilla Extract, 2 tsp
    Baking Soda, 1.25 tsp
    Water, tap, 1 fl oz
    Salt, 1 tsp
    Cardamom, ground, .25 tsp
    Nutmeg, ground, .25 tsp
    Pepper, black, 1 dash

Tips

Use a non-stick liner or parchment paper for easy removal of cookies and clean up.

Pumpkin Bark is available from online retailers. You can also use chocolate chips and still have the seasonal flare by using spices like cinnamon, cardamom, and nutmeg.

Using brown sugar instead of white sugar will add a deeper color and flavor than white sugar alone.


Directions

Preheat oven to 350 degrees F (175 degrees C).

Cream together the butter, applesauce and brown sugar until smooth. Beat in the egg and egg whites one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour first, then pumpkin bark. Drop by large spoonfuls onto ungreased pans.

Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Serving Size: makes 24 large cookies, or 48 small cookies
