    2.75 veg broth
    1 cup long grain brown rice
    4 oz green chiles
    1 cup reduced fat cheddar cheese


bring veg broth to a boil
add rice and reduce heat to low
cover and simmer 40-60 mins
stir in chiles and cheese
cover and let stand 5 mins
