    3 fresh chiles, seeded and finely chopped
    1/4cup cilantro, finely chopped
    3 TBS lime juice
    1 tsp salt
    1/2 cup olive oil

    6 cups cooked brown rice
    1 green bell pepper, diced
    2 tomatoes, diced
    3 scallions, sliced
    2 carrots, finely chopped
    1 cup pumpkin seeds, toasted


Combine dressing ingredients in a bowl and whisk until well blended. Set aside.

In a separate bowl, combine salad ingredients, except for pumpkin seeds. Stir dressing into salad and toss well. Sprinkle pumpkin seeds over the top.

May be served immediately, but is even better when chilled for a few hours.

Makes 10-12 servings of 1 cup each.
