    12 ozs prepared shortcrust pastry
    1 large onion, peeled and finely chopped
    Salt and white pepper
    8 ozs cooked lamb, diced
    Pinch of dry mustard
    A little lamb stock
    heaped dessertspoonful fresh chopped herbs (parsley, mint, thyme, etc. mixed)


Set oven to 350°F or Mark 4. Roll out the pastry on a lightly floured surface, divide in half and use one half to line a greased 8-9 inch, deep pie plate. Mix together the lamb, onion, herbs and seasoning, spoon on to the pastry and spread out. Sprinkle over sufficient stock to moisten. Cover with the remaining pastry, sealing the edges well and trimming neatly. Make a small steam hole in the centre and decorate with pastry leaves from the trimmings. Brush with a little milk and bake for 30-40 minutes until golden. Serve hot or cold with vegetables. Serves 6.
