Ingredients

    3/4 cup Egg whites
    1 cup Brown sugar
    1 cup Applesauce, unsweetened
    1/2 cup Pineapple juice
    1/2 cup Soy milk
    2 tsp Vanilla extract
    1 tsp Nutmeg, ground
    2 Tbsp Cinnamon, ground
    2 tsp Baking Soda
    2.5 tsp Baking Powder
    2 cup Whole wheat flour
    1 cup Oatmeal
    2 cup Carrots, grated

Directions

Pre-heat oven 350*
Combine wet ingredients and spices.
Combine flour, oatmeal, baking soda, and baking powder.
Stir in grated carrots. Add optional raisins or walnuts.
Bake in greased loaf pan for 25 minutes.
Makes 16 servings.
