    1 cup asparagus
    2/5 block of extra firm tofu
    1 14oz. can of vegetable broth
    1/2 cup tomato sauce
    1 cup arborio risotta
    1/2 tsp. rosemary
    1/4 tsp. pepper


Spray pan w/non-stick spray, then fry small cubed tofu. Spray other pan w/non-stick spray and heat up risotto. Heat vegetable broth in separate pan. Par boil asparagus then cut into bite size pieces. When broth his hot add 1/2 cup at a time to risotto until it is absorbed approximately 20 min. While risotto is cooking add rosemary and pepper. When tofu is crisp add to cooked risotto. Add asparagus to risotto and stir in 1/2 cup tomato sauce.
