Introduction

Since we had venison, I ground up a 1 lb. roast and used my standard sauce recipe. Since we had venison, I ground up a 1 lb. roast and used my standard sauce recipe.

Ingredients

    1 yellow onion, chopped
    1 large stalk celery, chopped
    1 large clove garlic, minced
    1 T olive oil
    1 pound ground venison
    1 15 oz. can, or 2 cups, of no-salt tomato sauce
    1 6 oz. can of tomato paste
    1 15 oz. can of no-salt diced tomatoes
    1 T basil
    1 T oregano
    1 tsp turmeric
    1 tsp salt

Nutritional value based on Hunt's boxed tomato sauce and Cento's tubed tomato paste.


Directions

Heat the olive oil in a sturdy non-aluminum pan over medium heat. When hot, add the onions and celery and saute for 10 minutes or until onion begins to soften. Add the garlic and stir for 1 minute. Add the ground venison and stir into the vegetable mixture. Keep stirring until the venison has browned. Add the tomato sauce, tomato paste, and diced tomatoes. Stir in the spices and allow to simmer for 1 hour for best flavor.

Serving Size: makes 6 1.5 cup servings
