This is a nice alternative to mashed potatoes. This is a nice alternative to mashed potatoes.
Number of Servings: 4


    1 Medium Head Cauliflower (5"-6")
    4 Tablespoons fat-free cream cheese, softened
    1/4 cup grated Parmesan
    2 cloves minced garlic
    1 teaspoon chicken bouillon
    1 teaspoon freshly ground black pepper
    4 Tablespoons Margarine


For a milder flavor, try roasting the garlic first. For a different twist, use orange or green cauliflower. For a crisp top, place in a baking dish and put under the broiler until brown peaks form. Top with chopped chives.


Set a steamer basket inside of a large pot and fill with water just to below the height of the basket. Bring to a boil.

Clean and cut cauliflower into small pieces. Place in steamer basket and cook for about 6 minutes, or until well done. Do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until smooth.
