Ingredients

    1 tsp instant yeast
    2 ½ cups whole wheat bread flour
    ½ cup bulgur wheat
    ¼ cup toasted sesame seeds
    1 cup homemade ricotta cheese (or whole milk storebought ricotta)
    ¼ cup honey
    1 tbsp toasted sesame oil
    ¼ cup milk
    1 tsp salt

Directions

In a large bowl (or the bowl of a stand mixer fitted with the dough hook), combine the yeast, flour, bulgur and sesame seeds.
Whisk together the ricotta, honey, sesame oil, milk and salt and add to the flour mixture.
Knead for 10 minutes on low speed, or by hand for 12 minutes.
Cover and let rest for 40 minutes.
Deflate dough, shape into a loaf and place in a greased 9x5” pan.
Cover and let rise 1 hour.
Preheat oven to 450F.
Place loaf in the oven and immediately reduce the temperature to 375F.
Bake for 40 minutes, until hollow sounding inside. Tent with foil after 20 minutes to prevent overbrowning.

Serving Size: makes one 9x5" loaf, 16 slices
