    • 3 tablespoons oil
    • 1 onions
    • 1 garlic cloves
    • 1 teaspoon chilli powder
    • 1 hot green chilli pepper
    • 0.50 teaspoon salt
    • 0.25 teaspoon pepper
    • 0.50 teaspoon oregano
    • 1.50 cups tomato
    • 2 cups fresh pumpkin
    • 2 cups winter squash
    • 2 cups corn
    • 2 cups white beans




How to make Chilean Harvest Vegetable Stew
• In large pot, sauté in 3T. oil: onion, garlic, chili powder, chili peppers, salt, pepper, and oregano.
• Add and cook until tender: tomatoes, pumpkin or winter squash, corn.
• Add: white beans with liquid.
• Simmer at least 30 minutes. The soup will be thick and chunky, with a mild spicy flavor.
