Introduction

Ingredients

    CRUST
    2 cups ground walnuts
    1/2 tsp cinnamon
    1/4 tsp sea salt
    1/4 cup agave nectar (or honey)
    FILLING
    Juice of a lemon
    2 1/4 cups of cashew cream (or make your own)
    1 cup coconut oil
    1/2 cup of agave nectar
    1/4 tsp sea salt

Directions

Crust
Grease a pie pan or dish with coconut oil. Mix
ingredients well and press into the prepared pan. Put
in the fridge (or freezer) to set.
Filling
Juice of a lemon
2 1/4 cups of cashew cream
1 cup coconut oil
1/2 cup of agave nectar
1/4 tsp sea salt
Mix all the ingredients well. Cover the base with this
filling and refrigerate or freeze. This cheesecake
tastes even better after a day or two! You’ll be
amazed how much like the real thing this tastes, and
there is NO DAIRY!
How to make your own Cashew Cream
2 cups raw organic cashews
Filtered water
Soak cashews in filtered water for 1-4 hours. Drain
well, place in a blender or magic bullet, almost cover
with fresh filtered water and blend until smooth.
Leave out overnight to “culture”.
Serves 8-10
