Introduction

Fast and easy..great for a summer potluck, or throw over a pile of field greens and top with some crushed, baked tortilla chips for a nice lunch. Fast and easy..great for a summer potluck, or throw over a pile of field greens and top with some crushed, baked tortilla chips for a nice lunch.

Ingredients

    1 can of low salt Corn
    1 can of black beans (drained and rinsed)
    1 can of Kidney beans (drained and rinsed)
    1 cup of cooked and cooled Brown Rice
    1/2 cup of diced scallions or leeks
    1 cup of your favorite salsa
    2 minced Jalapeno peppers (optional)


Directions

Throw all ingredients in a bowl and mix well. Season lightly with salt and pepper. Cover and chill for a few hours and serve!
