Ingredients

    Sweet potato, cooked, baked in skin, without salt, (1 small)
    Brown rice (1 cup cooked)
    Black-eyed peas, immature seeds, cooked, boiled, drained, without salt, (1 Cup)
    Asparagus, fresh, (1 cup)
    Red Ripe Tomatoes, (2 medium whole)
    Pepper, black, (2 tbsp)
    Italian Seasoning, (2 tbsp)
    Mrs. Dash Garlic & Herb Seasoning Blend, (2 tbsp)
    Water, tap, (2 cup)
    Extra Virgin Olive Oil, (1 tbsp)

Tips

Optional:
Add: meat, fish
Serve with: cheese, tortilla chips, meat, fish


Directions

Pre-cook:
Sweet potato (bake)
Asparagus (steam)
Black beans (boiled)
Brown rice (cooked)

1. Place 2 cups of water in sauce pan or slow cooker on low heat
2. Slice: tomato, asparagus, sweet potato
3. Add black beans, brown rice, sliced tomatoes, sliced asparagus, and sliced sweet potatoes
4. Add seasonings and extra virgin olive oil
5. Stir together and cover
6. Simmer for about 2 hours stirring occasionally
