    Olive Oil, 1 1tsp
    Parsnips, 1 cup slices
    Carrots, raw, 1 cup, chopped
    Celery, raw, 3 stalk, medium (7-1/2" - 8" long)
    Ginger Root, 2 tsp
    Garlic, 1 clove
    Earthly Choice Split Red Lentils (1/4 c dry serving), 6 serving
    Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup, 3 serving
    Water, tap, 3 cup (8 fl oz)
    Salt, 1 tbsp
    Paprika, 1 tsp


If you can't eat any alliums, you can also eliminate the garlic.


Chop veggies and saute in olive oild for several minutes, stirring.

Add aromatics and stir for 30-60 seconds
add lentils and stir for 30 seconds
add broth and water, bring to a boil, cover and lower heat for 20 minutes.

Salt to taste.

Serve over rice, as a soup, or with another grain such as quinoa or farro.
