    *Peanut Butter, chunk style, 1 cup (remove)
    *Margarine, soft, 0.5 cup (remove)
    Applesauce, unsweetened, 0.5 cup (remove)
    Granulated Sugar, 1 cup (remove)
    Brown Sugar, 1 cup, packed (remove)
    Egg, fresh, whole, raw, 2 large (remove)
    *Flour, white, 2.5 cup (remove)
    Baking Powder, 1 tsp (remove)
    Baking Soda, 1.5 tsp (remove)
    Salt, .5 tsp (remove)
    Apples, dried, 1 cup (remove)

    Optional, and not included in calculation: 1 cup butterscotch chips (adds approximately 30 cal/cookie), 1 tsp vanilla (negligible)


These will be very soft and chewy. They spread, too. (Be warned!)


Cream together butter, applesauce, peanut butter and sugars. Beat in eggs & vanilla if desired.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Chop dried apples finely and fold in; fold in butterscotch chips if desired.
Put batter in refrigerator for 1-4 hours until easy to handle.
Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake. Transfer quickly.
